1 ½ cups finely chopped green or red bell peppers
½ cup seeded and finely chopped jalapeno chilies
1 ½ cups cider vinegar
1 large onion, finely chopped
6 and 1/3 cups sugar
few drops of green or red food coloring
2 packages Certo
½ teaspoon butter or margarine (to reduce foaming)
1- Combine peppers, vinegar, onion and sugar in a large saucepan. Heat to boiling and cook 10 minutes stirring constantly.
2- Strain through cheese cloth.
3- Add food coloring and Certo.
4- Bring to a boil. Boil for 5 minutes.
5- Pour into sterilized jars.
6- Water bath for at least 10 minutes.
Serve over a block of cream cheese. Eat with crackers.
