Children Friendly Chicken Enchiladas

1 can cream of chicken soup
1 can milk
1 small carton sour cream
12 flour tortillas
Cooked chunks of chicken
Sliced black olives
Shredded cheddar cheese

Mix soup, milk and sour cream.

Spread a little on the bottom of a 9 x 13 pan.

Soften the tortillas so they don’t break. Two ways to do this follow.
Open the plastic package, leave the tortillas in the package and heat in the microwave for 1-2 minutes.
Or boil a large pot of water, place a splatter screen over the top of the pot, like a lid. Place the tortillas one at a time on the screen. The steam will soften the tortillas and make them pliable.

Spread some soup mixture down each center of tortilla; along with cheese, chicken and olives.

Roll and place in pan.

Spread remaining soup over the top and then shredded cheese.

Sprinkle green chilies and/or onion on top to taste.

Bake at 375 degrees until hot.

I add green chilies and/or a few onions to a few for dad and mom!
