Never Fail Chicken

1/2 stick butter
2 teaspoons seasoned pepper
1 fryer, cut in pieces
2 cups instant mashed potato flakes; not pearls

Melt butter.
Add pepper
Put potato flakes on waxed paper or in a large storage baggie.

Dip chicken pieces first in butter, then in potato flakes, coating chicken completely.

Place in a well greased baking dish.

Bake at 375 degrees for 1 hour or until golden brown.
