Sauce:
1 small can tomato paste
1 cup sugar
2 Tablespoons corn starch
3/4 cup vinegar
1 Tablespoon soy sauce
1/4 teaspoon ginger
1 small can sliced water chestnuts
1 small can mushrooms
Place pieces of chicken in flat roasting pan.
Make sauce; Place tomato paste into 2 cup measure and add enough water to make 1 1/4 cups.
Combine all ingredients in a medium sauce pan, bring to boiling stirring constantly.
Boil 2 minutes and pour over chicken.
Bake covered with foil for 30 minutes at 375 degrees then uncover and cook for 30 minutes longer.
Serve with rice or noodles.
