Ingredients
2 tablespoons yeast
2 cups warm water
1/2 cup sugar
1 tablespoon salt
2 eggs, beaten
1/4 cup oil
6 1/2-7 cups flour
Directions
Dissolve yeast in water in large bowl. (I usually add a pinch of sugar and wait for the yeast to foam but the original recipe didn't call for this step.).
Add next 4 ingredients and 3 cups flour; beat until smooth.
Stir in remaining flour.
Knead 6-8 minutes.
Let rise in greased bowl until double.
Divide into 3 loaves; let raise again.
Bake at 375°F for 25-30 minutes.

30 Minute Rolls
1 (1/4 ounce) package yeast (2 1/4 teaspoons)

1 teaspoon sugar

Directions:

Lemon Blueberry Bread

1/2 teaspoon salt
2/3 cup buttermilk
2 tablespoons tightly packed lemons, zest of
2 tablespoons fresh lemon juice
8 ounces frozen blueberries
Icing
8 ounces powdered sugar ( or 1/2 box)
1/4 cup butter, melted
1 1/2 tablespoons tightly packed lemons, zest of
1/4 cup fresh lemon juice
Directions
Preheat oven to 325 degrees.
Important: grease and flour two loaf pans.
Cream butter and sugar.
Add eggs and beat until smooth.
Add buttermilk.
Mix dry ingredients together and add to buttermilk mixture.
Blend well.
Mix in lemon juice and zest.
Gently fold in blueberries and only mix until incorporated.
Pour batter into loaf pans.
Bake loaves on the middle rack of the oven for 60 to 65 minutes.
Cool bread 10 minutes, remove from pan and place on a large cookie sheet, top side up.
For icing: Combine icing ingredients in a bowl.
Beat icing with an electric mixer until smooth.
Drizzle icing over the warm loaves.
The icing will harden when the bread cools to room temperature.
I thought I should mention, if you make this bread without the addition of the blueberries, the baking time is closer to 50 minutes and I recommend increasing the amount of buttermilk from 2/3 cup to 1 cup.

3 eggs or 5 T. powdered eggs and 10 T. water
2 ¼ cups sugar
1 ½ cups vegetable oil
1 ½ cups milk
1 ½ Tablespoons poppy seeds
1 ½ teaspoons almond flavoring
1 ½ teaspoons butter flavoring
Preheat oven to 350 degrees.
Mix all ingredients together.
Pour into lightly greased loaf pans.
Bake one hour.
Makes 2 loaves.

Raise until double two times.
Shape rolls, place on large, greased cookie sheet and let raise again until double in size.
Bake at 325° for 18-20 minutes.
Makes 48 rolls.

QUICK AND EASY CORNBREAD
2 cups Quick Mix or Bisquick
2 eggs
1/3 cup cornmeal
½ cup sugar
1 cup milk
½ cup butter or margarine
Mix all ingredients at 1 time. Bake at 350 degrees for 30 minutes or till done.

Knead until smooth and elastic, about 10 minutes.
Place in oiled bowl, turn dough to coat all sides, cover and let rise until doubled.
Punch down and divide in half.
Shape dough into two long slender loaves.
Grease and sprinkle with cornmeal either a French bread pan or large cookie sheet.
Place loaves in pan and cut diagonal gashes on top of each loaf (I use scissors).
Cover and let rise until doubled.
